Ingredients:
2 1/2 cups cake flour
1 tablespoon baking powder
1/2 teaspoon sea salt or kosher salt
1 1/14 whole fat buttermilk
4 large room temperature egg whites
1 1/2 cups granulated sugar
2 teaspoons grated lemon zest
1 teaspoon grated orange zest
1 stick room temperature unsalted butter
1 teaspoon lemon extract
1/2 teaspoon orange extract

Frosting:
3 sticks room temperature unsalted butter
4 cups powdered sugar
1 tablespoon grated lemon zest
3 tablespoons lemon juice
1 teaspoon lemon extract
1/2 teaspoon orange extract

Directions:
Preheat oven to 350 degrees. Butter and flour two 8 inch cake pans.
In a medium bowl sift flour, baking powder and salt. In separate bowl whisk buttermilk and egg whites.
In a large mixing bowl or bowl of stand mixer place sugar, lemon zest, orange zest and sugar and beat on medium speed 5 minutes. Mixture should be light, fluffy and fragrant, then add both lemon and orange extracts and beat again just until mixed.
Begin to add in thirds flour mixture and buttermilk milk mixture alternately, beginning and ending with flour mixture. Beat the batter on high speed for two full minutes to incorporate as much air as possible.
Divide batter evenly between two prepared cake pans, making sure to smooth tops of batter for even baking.
Bake 30-35 minutes or until cakes spring back or tooth pick entered in the center or cake comes out clean.
Remove from oven once done and allow to cool in pans on cooling rack at least five minutes before carefully removing from pans. Place cake on cooling racks and allow to cool completely before frosting.

Frosting directions:
Place sticks of butter in large bowl or bowl of a stand mixture. Beat butter until light and very pale in color, about five minutes. Add lemon zest and beat another minute. Slowly add sugar one cup at a time. Add lemon juice and extracts, beat again until frosting is light and fluffy.

Place one cooled cake layer on cake plate, frost top and add second layer. Frost top and sides to your liking.
