How do you make Cheesecake even better? Add Cherries, Chocolate Ganache, and top it with berries! My Facebook fan, Jewel, has the perfect recipe!

Crust:
3 tbsp sugar
1/3 cup butter or margarine, melted
1-1/2 cups graham cracker crumbs (Nabisco Cookies)

Combine all ingredients and place in a 9 inch springform pan lined with parchment paper and sprayed with Pam. Press it down onto the parchment.

Cheesecake:
4 packages of Philadelphia Cream Cheese softened
1 cup sugar
1 tsp pure vanilla extract
4 eggs
1 cup of maraschino cherries, drained.

In a mixing bowl, add the cream cheese and sugar on low speed, using paddle attachment. Cream together until smooth. Add eggs and vanilla together in a bowl, adding eggs one at a time. Scrape your bowl and increase speed to about second speed on your mixer. Now, fold in cherries. Spread mixture on top of graham cracker crust. Bake at 350 in a hot water bath, or place in the center rack of your oven. Bake at 325 for an electric or convection oven. Bake for about 30 to 40 minutes or until the cake has a slight jiggle or brown on top. Let cool in the refrigerator.

Chocolate Ganache Topping:
3 cups of semi sweet chocolate
2 cups of heavy cream

Bring cream to a boil, on medium heat. Add chocolate and whip with a whisk until smooth. Pour on top of your cooled cheesecake.
